Sauce Hollandaise in 3, 2, 1....
1 egg yolk
1/2 lemon, juice only
1/2 teaspoon- 1 teaspoon kosher salt
1/3 pound melted butter
cracked black pepper to top or white pepper or chili flakes
2 eggs to poach
toast or toasted baguette
